Menu of the month: Sub Astor

For 15 years Sub Astor has been a leading speakeasy in Brazil’s São Paulo. 

Currently number 58 in The World’s 50 Best Bars 51-100 list, the bar has achieved veteran status and is famed for hosting international bartenders and taking them all over Brazil to discover the country’s local produce.

Its latest menu follows a similar theme – combining local Brazilian ingredients with foreign influence to create unique serves.

White Mastruz

The White Mastruz pays homage to the mastruz herb which was traditionally used to make medicinal tea in Central and South America. The herb is combined with tiquira, guava and spices to create a light, vegetal and fruity cocktail.

Mastruz, vodka, tiquira, Lillet, lime, chlorophyll, guava, spices

Method: All ingredients are combined, clarified with milk and batched

Cambuci Old Fashioned

Brandy, pear eau-de-vie, cambuci cordial, orange bitters 

Breu Branco

 

White breu resin, bourbon, artichoke bitter, vermouth bianco

Uvaia Cobbler

Tequila, uvaia, sherry, falernum, citrus
