UK's first birch spirit launches

Freya, billed as the UK's first birch sap spirit, will launch this November.

The sap used for distillation is said to be harvested every spring from northern European birch forests using sustainable methods.

Dave Wallwork, founder of Pure Wild Spirits, the brand owner, said: “Freya is truly innovative and a distinctive new taste - pure foraged birch sap from icy northern forests distilled into a new wild, full flavoured spirit - the response from mixologists and bartenders has been incredible.

"We have an exciting few months ahead introducing Freya to consumers as we start to build this new category.”

The clear spirit is produced by John Walters of English Spirit Distillery in Great Yeldham, Essex, from a copper pot still.

Freya will be available from November 3 with an exclusive launch event taking place at The Cuckoo Club, London. It will also be available from online retailer Master of Malt.
