Atlas bar in Singapore’s latest cocktail menu is inspired by the seven sisters of the Pleiades constellation.

Across seven distinct chapters and 16 cocktails, the stories and personalities of each daughter are reflected through the character, flavour, strength and texture of each drink. Led by head bartender Esmeralda Castrogiovanni, the new menu is designed to flow from afternoon into evening, progressing from non-alcoholic cocktails to more spirit-forward drinks.

Apple Aria

Apple Aria sits under the section Electra, a daughter of Atlas who ‘lived’ on the island of Samothrace. The drink is a Mezcal Highball with fresh citrus and floral notes.

Technique: Add the mezcal, Bitter Bianco and elderflower liqueur to a mixing glass with ice. Stir and strain into a chilled highball glass. Top with clarified green apple soda and garnish with ginger candy.
